I got this recipe from my Aunt Sue, but made a couple changes. This is a great winter dish! Crowd pleaser...

Ingredients
- 1 pound bulk italian sausage
- 1 cup chopped onion
- 3 cloves garlic, minced
- 6 cups beef broth
- 3 3/4 cups water
- 2 1/4 cups tomatoes, canned and chopped, with liquid
- 1 1/2 cups chopped green pepper
- 1 cup carrot, sliced
- 1 cup tomato sauce, italian seasoned
- 3/4 cup tomato paste
- 3/4 teaspoon dried oregano
- 3/4 teaspoon dried basil
- 1 - bag frozen tortellini
- 1 large zucchini, sliced & quartered
- 6 tablespoons fresh parsley, chopped
- - salt & pepper to taste

Step 1Crumble sausage into a large saucepan, cook over medium heat til no longer pink. Remove w a slotted spoon to paper towels. In one tablespoon of drippings, saute carrot, onion, & garlic til tender. Stir in broth, water, tomatoes, green pepper, tomato sauce, tomato paste, oregano & basil.

Step 2Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat, stir in sausage, tortellini, zucchini & parsley. Cover and simmer 25-30 minutes longer or until tortellini is tender.
