  • 1 lb
    bulk italian sausage
  • 1 c
    chopped onion
  • 3 clove
    garlic, minced
  • 6 c
    beef broth
  • 3 3/4 c
  • 2 1/4 c
    tomatoes, canned and chopped, with liquid
  • 1 1/2 c
    chopped green pepper
  • 1 c
    carrot, sliced
  • 1 c
    tomato sauce, italian seasoned
  • 3/4 c
    tomato paste
  • 3/4 tsp
    dried oregano
  • 3/4 tsp
    dried basil
  • 1
    bag frozen tortellini
  • 1 large
    zucchini, sliced & quartered
  • 6 Tbsp
    fresh parsley, chopped
  • ·
    salt & pepper to taste

How to Make Italian Sausage Tortellini Soup


  1. Crumble sausage into a large saucepan, cook over medium heat til no longer pink. Remove w a slotted spoon to paper towels. In one tablespoon of drippings, saute carrot, onion, & garlic til tender. Stir in broth, water, tomatoes, green pepper, tomato sauce, tomato paste, oregano & basil.
  2. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat, stir in sausage, tortellini, zucchini & parsley. Cover and simmer 25-30 minutes longer or until tortellini is tender.
