I got this recipe from my Aunt Sue, but made a couple changes. This is a great winter dish! Crowd pleaser...

Ingredients

  • 1 pound bulk italian sausage
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 3 3/4 cups water
  • 2 1/4 cups tomatoes, canned and chopped, with liquid
  • 1 1/2 cups chopped green pepper
  • 1 cup carrot, sliced
  • 1 cup tomato sauce, italian seasoned
  • 3/4 cup tomato paste
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon dried basil
  • 1 - bag frozen tortellini
  • 1 large zucchini, sliced & quartered
  • 6 tablespoons fresh parsley, chopped
  • - salt & pepper to taste

How To Make italian sausage tortellini soup

  • Step 1
    Crumble sausage into a large saucepan, cook over medium heat til no longer pink. Remove w a slotted spoon to paper towels. In one tablespoon of drippings, saute carrot, onion, & garlic til tender. Stir in broth, water, tomatoes, green pepper, tomato sauce, tomato paste, oregano & basil.
  • Step 2
    Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat, stir in sausage, tortellini, zucchini & parsley. Cover and simmer 25-30 minutes longer or until tortellini is tender.
