bulk italian sausage
1 c
chopped onion
3 clove
garlic, minced
6 c
beef broth
3 3/4 c
2 1/4 c
tomatoes, canned and chopped, with liquid
1 1/2 c
chopped green pepper
1 c
carrot, sliced
1 c
tomato sauce, italian seasoned
3/4 c
tomato paste
3/4 tsp
dried oregano
3/4 tsp
dried basil
bag frozen tortellini
1 large
zucchini, sliced & quartered
6 Tbsp
fresh parsley, chopped
salt & pepper to taste

How to Make Italian Sausage Tortellini Soup


  • 1Crumble sausage into a large saucepan, cook over medium heat til no longer pink. Remove w a slotted spoon to paper towels. In one tablespoon of drippings, saute carrot, onion, & garlic til tender. Stir in broth, water, tomatoes, green pepper, tomato sauce, tomato paste, oregano & basil.
  • 2Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat, stir in sausage, tortellini, zucchini & parsley. Cover and simmer 25-30 minutes longer or until tortellini is tender.
