Ingredients
- 1/2 pound meatballs, cut into 1/2s or 1/4s
- 1/2 package pasta (i used small elbow macaroni
- 1 - large onion, chopped and sautead
- 2 - large cloves fresh garlic, chopped
- 1 tablespoon italian seasoning
- 1 - 14 ounces can sweet corn, drained
- 1 - 14 ounces can italian green beans, drained
- 1 - 14 ounces can northern beans, drained
- 1 - 14 ounces can beef broth or two beef boullion cubes
- - basil/oregano, undrained and salt and pepper to taste
- 4 - fresh basil leaves, julienned
- - water added to consistency of your liking
- 1/4 pound crumbled italian spicy sausage (optional)
- 1 - 14 oz. can diced tomato with italian seasonings.
How To Make italian pasta soup for the soul

Step 1To prepare meatballs: Before baking, add to 1/2 lb. lb. ground beef, 1 egg beaten, 1/4 cup milk, 2T Italian breadcrumbs, 1 tsp. onion powder, 1 tsp. garlic powder. Form into 1" meatballs. Bake at 350 for 30 minutes. Drain grease. While meatballs cook, prepare pasta according to package directions. Put chopped onion in large soup pot with 2T olive oil or 2 large pats of butter on med/low. While pasta is boiling and onions are cooking, open all cans and drain liquid. DO NOT DRAIN DICEDD TOMATO CAN. If using Italian sausage, brown, drain and crumble.

Step 2Slice basil in Julienne style. After onions are translucent, turn burner to med/high. Add the prepared meatballs, let simmer with onion for just a few minutes. Add about 1/2 cup water and can of broth. Add more water after adding all ingredients. Add diced tomatoes with the liquid. Drain and add corn, northern beans, green beans, and basil leaves. If using optional items, add those items at this time. Drain pasta and add to pot. Add Italian seasoning. Stir all ingredients together. Add water accordingly, and salt and pepper to taste. Heat on high for 15-20 min. then simmer onlow if eating later. Simmer on med. high if eating within one hour. Serve with small dollop of sour cream (optional) and crusty Italian bread. Enjoy!
