Ingredients
- 1 tablespoon olive oil
- 1 pound beef short ribs
- salt and pepper
- 1 tablespoon tomato paste
- 6 cups beef broth
- 6 cloves garlic, minced
- 1 tablespoon minced ginger
- 2 tablespoons rice vinegar
- 1 cinnamon stick
- 2 star anise
- 10 ounces rice noodles
- TOPPINGS
- sliced onions
- fresh cilantro
- bean sprouts
- lemon or lime slices
How To Make instant pot beef short rib pho

Step 1Select saute on Instant Pot Add olive oil. Season the ribs with salt and pepper. Place in Instant Pot and let sit undisturbed until browned on all sides. Stir in the tomato paste.

Step 2Pour in the beef broth and add the garlic, ginger, vinegar, cinnamon stick, and star anise Secure lid and select pressure cook. Cook for 30 minutes.

Step 3Remove the rib meat and transfer to a plate. Remove the cinnamon stick and star anise. Put through a fat separator and discard the fat. Add the broth back to the pot and select saute.

Step 4Add the noodles and cook until noodles are tender, about 10 minutes. Place the meat back in and ladle into bowls.

Step 5Top with onions, cilantro, bean sprouts and lemon or lime slices. Enjoy.
