Ingredients

  • 2
    celery stalks
  • 1
    red pepper
  • 1
    onion
  • 2
    cloves garlic minced
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 1 lb
    ground hamburger
  • 1/4 lb
    ground sausage
  • 2 can(s)
    beef broth
  • 4 c
    water
  • 1 can(s)
    black beans, canned
  • 1 Tbsp
    beef bouillon
  • 2 c
    cooked rice
  • 2 Tbsp
    tomato paste
  • 1 can(s)
    small can tomato juice

How to Make Hearty Vegetable Beef Soup

Step-by-Step

  1. Brown hamburger and sausage with some salt and pepper. Add the minced garlic.
  2. Drain off the meat reserving a couple Tablespoons of the fat. Remove meat from pot. Add all the cut up vegetables and brown until soft.
  3. Add all of the other ingredients and the meat in to the pot. Turn on low and simmer for 30 minutes.
    Serve with Parmesan cheese
