We had this camper stew with my best friend's mom, Mrs. Doyle, in my childhood. I have made it many times over the years. It's always great. I just added a few things to make it heartier. We laid Mrs. Doyle to rest today, Oct 25, 2016. I would like to dedicate my Blue Ribbon to her, Mrs. Norma Jean Doyle 1930-2016. Thank you Kitchen Crew. This means a lot to me.

Blue Ribbon Recipe

This is a delicious and economical meal your family is going to love! We prepared this in a Crock Pot and the kitchen smelled amazing while it was simmering. This soup has a consistency more like a stew and is very hearty. The seasonings are spot on, nothing is too overpowering. Add some crusty bread and you have a comforting winter meal.

Ingredients

  • 1 pound ground chuck, cooked
  • 1 large can of Veg-All large cut vegetables, drained, 29 oz.
  • 2 cans vegetarian vegetable soup, 15 oz
  • 1 can petite diced tomatoes, undrained, 14.5 oz.
  • 1/2 cup diced frozen onions
  • 1 cup beef broth
  • 2 - potatoes, peeled and cubed
  • 1 teaspoon garlic powder, or more
  • 2 teaspoons chili powder
  • 1/2 teaspoon pepper
  • 1 tablespoon Worcestershire sauce

How To Make hearty hamburger soup for the crock pot

  • Step 1
    Brown beef (or ground turkey) with the onion, drain.
  • Step 2
    Dump all ingredients in a large pot. Bring to a boil, reduce heat and simmer for at least a half hour. If it's too thick add more broth or water. If you simmer it longer it will just get better.
  • Step 3
    You may also cook in a Crock Pot. Add beef to Crock Pot.
  • Step 4
    Then add remaining ingredients.
  • Step 5
    Cook on high 4 hours or low 6-8 hours. Serve with oyster crackers, biscuits or crusty bread, and top it with some shredded cheese if desired.
