This is a really good satisfying soup on cold winter days. I make it when I got a hankering for something different.

Ingredients
- - 2 pounds ground beef
- - 1 onion, diced
- - 1 lg can diced tomatoes
- - 1 can drained and rinsed chickpeas
- - 1 can drained and rinsed red kidney beans
- - 1lg bag frozen soup or stew vegetables
- - 1 tsp. bottled minced garlic
- - 2 qts beef broth
- - 2-3 cups water
- - 1 tsp italian herbs
- - salt and pepper to taste
How To Make hamburger soup

Step 1In a lg pot. add 2 tablespoons oil, olive or whatever you have on hand. Add the ground beef to the pot, breaking it up as you go. Add the diced onions. Brown beef and onions until no longer pink. Drain off all the fat.

Step 2Return the beef and onions to the pot. Add the tomatoes, chickpeas, kidney beans, beef broth, enough water and bag of frozen veggies. Add seasonings and garlic. Stir. Bring to a boil.

Step 3Turn down heat to medium and cover. Leave the lid partially vented so it doesn't boil ver. If you have to, reduce your heat a little more. Let it cook for about 45 mins or until veggies are done . Add salt and pepper to taste. Let sit for 15 mins to let the flavors marry.

Step 4Serve in bowls. Sprinkle grated cheese on top and serve.
