This is a wonderful and hearty soup on a cold day and quick & easy to make as well!

Ingredients

  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 1 1/2 pounds lean ground beef
  • 4 large gold potatoes
  • 1 large carrot, scraped and diced
  • 1 large stalk celery, peeled and diced, leaves and all
  • 2 boxes (32 oz. each) beef broth
  • handful of frozen english peas
  • 2 tablespoons fresh chopped parsley, more for garnishing if desired
  • 1 tablespoon fresh, chopped thyme or 1 tsp. dried thyme
  • salt & pepper to taste

How To Make hamburger & potato soup

  • Step 1
    Heat olive oil in a large dutch oven over medium heat, and sauté diced onions, celery and carrots. until vegetables have softened.
  • Step 2
    Add in the hamburger meat and brown ground beef till no longer pink, drain off grease.
  • Step 3
    Pour in the beef broth, then add in the diced potatoes and herbs. Cover and bring to a simmer. Cook on low heat for about 20-25 minutes, just till potatoes are fork tender.
  • Step 4
    Stir in frozen peas in the last few minutes, just to thaw and warm.
  • Step 5
    Adjust salt and pepper as needed and garnish with more fresh, chopped parsley if desired.
