Ingredients
- 1 medium onion, diced
- 2 tablespoons olive oil
- 1 1/2 pounds lean ground beef
- 4 large gold potatoes
- 1 large carrot, scraped and diced
- 1 large stalk celery, peeled and diced, leaves and all
- 2 boxes (32 oz. each) beef broth
- handful of frozen english peas
- 2 tablespoons fresh chopped parsley, more for garnishing if desired
- 1 tablespoon fresh, chopped thyme or 1 tsp. dried thyme
- salt & pepper to taste
How To Make hamburger & potato soup

Step 1Heat olive oil in a large dutch oven over medium heat, and sauté diced onions, celery and carrots. until vegetables have softened.

Step 2Add in the hamburger meat and brown ground beef till no longer pink, drain off grease.

Step 3Pour in the beef broth, then add in the diced potatoes and herbs. Cover and bring to a simmer. Cook on low heat for about 20-25 minutes, just till potatoes are fork tender.

Step 4Stir in frozen peas in the last few minutes, just to thaw and warm.

Step 5Adjust salt and pepper as needed and garnish with more fresh, chopped parsley if desired.
