guinness beef with carrots
This recipe is a riff of the popular JAP Blue Ribbon recipe* by Michelle from London. The amount of Guinness was too much for me so I found the version right for us, but eternal gratitude to Michelle for inspiring me to make this yummy stew! =^..^= *Beef in Guinness (Stout Beer) by Michelle S.

Ingredients
- 2-3 tablespoons olive oil
- 2 tablespoons flour
- some salt and pepper, to taste
- 2 1/2 pounds stew beef, cut into chunks
- 1 large onion, diced
- 1 bag baby carrots or 6 medium carrots, peeled and chunked
- 1 bottle Guinness stout beer
How To Make guinness beef with carrots
-
Step 1Heat the olive oil in a Dutch oven over medium-high.
-
Step 2Season the flour with salt and pepper; stir. Add the beef and coat well. Brown the beef in the olive oil, then remove it from the pan.
-
Step 3Add the onion to the pan and cook until it is soft and transparent.
-
Step 4Add the beef back in the pan with the cooked onions, then add the baby carrots.
-
Step 5Cover with the Guinness beer, adding water if needed to cover the contents. Stir well.
-
Step 6Bring to a boil, then reduce the heat to low. Cover and let simmer for 1 1/2 hours, stirring every 10 minutes. Add a little water if needed during cooking.
-
Step 7Remove the lid to reduce the liquids to the desired consistency. Cook until beef is tender and serve over mashed potatoes or cooked rice.
