Ground Beef Soup

This is one of those pantry soups, throw in whatever you have. Substitute kale for spinach or green beans for the corn. It's all good. Add some bread and salad and you have a meal.

Ingredients

  •   1/2 lb
    ground beef
  •   1/2
    chopped onion
  •   1
    clove garlic, minced
  •   1
    stick celery, diced
  •   1
    carrot, diced
  •   1
    small bell pepper, diced
  •  
    sprig each of rosemary, thyme and oregano
  •   1/2 c
    tomato sauce
  •   4 or 5
    tomatoes, chopped
  •   1/2 c
    frozen chopped spinach
  •   1/2 c
    frozen corn kernals
  •  
    water
  •   1 Tbsp
    beef base
  •  
    salt and pepper
  •   2
    medium red potatoes, diced

How To Make

  • 1
    Brown beef.
  • 2
    Add onion, peppers and celery. Saute until tender.
  • 3
    Add rest of ingredients except potatoes. Simmer 1 hour.
  • 4
    Add potatoes and cook until done.
  • 5
    Serve sprinkled with your favorite cheese. We like 5 cheese Italian blend.
