- 1 pound beef stew meat
- 6 cups water
- 28 ounces can diced tomatoes
- 1 - beef bouillon cube
- 1 - onion, chopped
- 2 tablespoons parsley
- 2.5 teaspoons salt
- 1.5 teaspoons thyme
- 1/2 teaspoon pepper
- 1 - zucchini, sliced
- 16 ounces garbanzo beans, canned, drained
- 1 cup macaroni, elbow or shell, uncooked
- 1/4 cup parmesan cheese, grated
How To Make forgotten minestrone

Step 1In a slow cooker, combine beef, water, tomatoes, bouillon, onion, parsley, salt if desired, thyme and pepper.

Step 2Cover and cook on low for 7-9 hours or until meat is tender.

Step 3Add zucchini, cabbage, beans and macaroni; cook on high, covered, 30-45 minutes more, or until the vegetables are tender.

Step 4Sprinkle individual servings with parmesan cheese if desired.
