Ingredients

  • 1 lb
    beef stew meat
  • 6 c
    water
  • 28 oz
    can diced tomatoes
  • 1
    beef bouillon cube
  • 1
    onion, chopped
  • 2 Tbsp
    parsley
  • 2.5 tsp
    salt
  • 1.5 tsp
    thyme
  • 1/2 tsp
    pepper
  • 1
    zucchini, sliced
  • 16 oz
    garbanzo beans, canned, drained
  • 1 c
    macaroni, elbow or shell, uncooked
  • 1/4 c
    parmesan cheese, grated

How to Make Forgotten Minestrone

Step-by-Step

  1. In a slow cooker, combine beef, water, tomatoes, bouillon, onion, parsley, salt if desired, thyme and pepper.
  2. Cover and cook on low for 7-9 hours or until meat is tender.
  3. Add zucchini, cabbage, beans and macaroni; cook on high, covered, 30-45 minutes more, or until the vegetables are tender.
  4. Sprinkle individual servings with parmesan cheese if desired.
