Ingredients

  • 1 pound beef stew meat
  • 6 cups water
  • 28 ounces can diced tomatoes
  • 1 - beef bouillon cube
  • 1 - onion, chopped
  • 2 tablespoons parsley
  • 2.5 teaspoons salt
  • 1.5 teaspoons thyme
  • 1/2 teaspoon pepper
  • 1 - zucchini, sliced
  • 16 ounces garbanzo beans, canned, drained
  • 1 cup macaroni, elbow or shell, uncooked
  • 1/4 cup parmesan cheese, grated

How To Make forgotten minestrone

  • Step 1
    In a slow cooker, combine beef, water, tomatoes, bouillon, onion, parsley, salt if desired, thyme and pepper.
  • Step 2
    Cover and cook on low for 7-9 hours or until meat is tender.
  • Step 3
    Add zucchini, cabbage, beans and macaroni; cook on high, covered, 30-45 minutes more, or until the vegetables are tender.
  • Step 4
    Sprinkle individual servings with parmesan cheese if desired.
