Ingredients
- 1 pound lean ground beef
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 - green bell pepper, diced in 1/2-inch pieces
- 1 - red bell pepper, diced in 1/2-inch pieces
- 1 small sweet potato, peeled, diced in 1/2-inch pieces
- 1 large garlic clove, minced
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon granulated sugar
- 1/8 teaspoon ground cumin
- 1 teaspoon salt
- 3 cups beef broth, heated
- 1/2 pound zucchini, diced in 1/2-inch pieces
- 1 cup whole kernel corn
- 2 tablespoons raisins
- 1/2 teaspoon tabasco pepper sauce
- 1 small pear (firm but ripe), diced in 1-inch pieces
- 6 cups cooked white rice

Step 1In large saucepan, boil water.

Step 2Remove saucepan from heat.

Step 3Add ground beef, stirring to break meat into little pieces. Let sit 5 minutes, stirring once or twice, until most of pink disappears from meat. Drain meat well, discarding water.

Step 4In large deep-sided skillet or Dutch oven, heat oil over medium-high heat.

Step 5Add onions and cook 4 to 5 minutes, stirring constantly, until onions are limp and slightly brown.

Step 6Mix in blanched beef.

Step 7Continue to cook, stirring constantly, until all liquid has evaporated from pan and meat is lightly browned, about 10 minutes.

Step 8Reduce heat to medium. Add bell peppers, sweet potato and garlic.

Step 9Continue cooking and stirring mixture 5 minutes or until peppers and potatoes are slightly tender.

Step 10Add parsley, sugar, cumin and salt. Stir and cook 1 minute to blend flavors.

Step 11Pour beef broth into skillet.

Step 12Add zucchini, corn, raisins and Tabasco pepper sauce.

Step 13Simmer gently 10 minutes, being careful not to boil.

Step 14Add pear and simmer 10 additional minutes or until all fruits and vegetables are tender.

Step 15Ladle over rice.
