fall is here and that means soup time.......i will make anything into a soup....even this......

Ingredients

  • 6-8 large tortillas, flour,fried,broken into bite size pieces
  • 2 cans enchilada sauce,red
  • 1 package frozen corn[1 pound]
  • 2 cans black beans, canned
  • 1 1/2 pounds spicey pork sausage
  • 1 large onion,diced
  • 1 cup bell peppers,chopped,mixed color
  • 1 package [2 c] mexican cheese blend
  • - sour cream...as garnish

How To Make enchilada soup

  • Step 1
    cook sauage in med PAN til no longer pink add onions and peppers cook til they soft add sauce,corn and beans bring to boil turn temp down cook bout 10 min
  • Step 2
    slowly add cheese to it stirrin while u add it as soon as it is melted serve in bowls with broken tortillas in bottom of bowl and sour cream on top....
