I enjoy soup, and like to find different types...this one is very good, and extremely easy.

Ingredients

  • 2 cans campbells beef broth
  • 1 - potato, cubed
  • 1 cup cut up tomatoes
  • 16 ounces bag frozen mixed vegetables
  • 1/4 teaspoon thyme
  • 1/8 teaspoon pepper
  • 1 1/2 cups cooked, diced beef

How To Make easy vegetable beef soup

  • Step 1
    In 3 qt stockpot combine broth, 2 c water, potato, tomato, vegetables, thyme and pepper. Heat to boiling. Cover, cook over low heat 15 min or until vegetables are tender, stirring occasionally. Add beef, heat through, stirring often.
