easy french onion soup-stove top then broiled
This is another old recipe and picture, I clipped from a magazine 30 years ago,and saved in my Soup Box. You start with sliced onions then canned broth. Simmered on top of the stove, then under the broiler. What could be simpler? and packed with great flavor. I have enjoyed it many times, and I hope you will also. Nancy. 9/22/13

Ingredients
- 2 teaspoons butter
- 2 cups thinly sliced ...onions
- 1 teaspoon flour
- 3 cups canned beef broth
- 4 slices french bread,.... lightly toasted
- 1/3 cup swiss cheese.......grated
- 1/2 cup parmesan cheese.......grated
How To Make easy french onion soup-stove top then broiled

Step 1Melt butter in a saucepan.

Step 2Gently brown the sliced onions. Add flour, stir well and continue to simmer.

Step 3Stir in broth and bring to a boil. Reduce heat and simmer for 15 minutes. Pre-heat broiler.

Step 4Divide soup between oven proof bowls. Top each bowl with two small slices of bread. Sprinkle with cheeses and broil, taking care not to burn the top.

Step 5***Note: I was out of French bread, so I had used rye bread, cut in half.. It was great with the added rye bread taste. Try it sometime. My favorite crunchy rye bread is made by Holsem.

Step 6***My friend made the recipe times four. For 8 cups of this soup, put it in a casserole dish, then under the broiler with the bread and cheese, for her Thur. afternoon bridge club. Her guests gave it ..5 stars!!
