Easy Beef Barley Soup

1 1/2 lb
stew beef or round steak-cut in very small cubes
olive oil
7 c
beef bullion cubes
1 large
onion- diced
1/2 c
chopped parsley
2 c
cabbage-cut in small pieces
1 can(s)
diced tomatoes
4 can(s)
mixed vegetables-drained
1 can(s)
12 oz. v-8 juice
1 can(s)
cut green beans
1 1/2 c
quick cook barley
fresh ground black pepper


1brown beef in oil,add water and bullion bring to a boil over high heat
2add,onion,parsley and cabbage,and tomatoes cook until cabbage is crisp tender approx.15 to 20 min.
3Add V-8 and bring back to boil then add the vegetables and barley and cook according to barley directions. Add pepper and then salt to taste.
4Soup needs to rest at least an hour for a better flavor-Enjoy!
