Ingredients

  • 1 1/2 pounds stew beef or round steak-cut in very small cubes
  • - olive oil
  • 7 cups water
  • 5 - beef bullion cubes
  • 1 large onion- diced
  • 1/2 cup chopped parsley
  • 2 cups cabbage-cut in small pieces
  • 1 can diced tomatoes
  • 4 cans mixed vegetables-drained
  • 1 can 12 oz. v-8 juice
  • 1 can cut green beans
  • 1 1/2 cups quick cook barley
  • - fresh ground black pepper

How To Make easy beef barley soup

  • Step 1
    brown beef in oil,add water and bullion bring to a boil over high heat
  • Step 2
    add,onion,parsley and cabbage,and tomatoes cook until cabbage is crisp tender approx.15 to 20 min.
  • Step 3
    Add V-8 and bring back to boil then add the vegetables and barley and cook according to barley directions. Add pepper and then salt to taste.
  • Step 4
    Soup needs to rest at least an hour for a better flavor-Enjoy!
