Ingredients
- 1 1/2 pounds stew beef or round steak-cut in very small cubes
- - olive oil
- 7 cups water
- 5 - beef bullion cubes
- 1 large onion- diced
- 1/2 cup chopped parsley
- 2 cups cabbage-cut in small pieces
- 1 can diced tomatoes
- 4 cans mixed vegetables-drained
- 1 can 12 oz. v-8 juice
- 1 can cut green beans
- 1 1/2 cups quick cook barley
- - fresh ground black pepper
How To Make easy beef barley soup

Step 1brown beef in oil,add water and bullion bring to a boil over high heat

Step 2add,onion,parsley and cabbage,and tomatoes cook until cabbage is crisp tender approx.15 to 20 min.

Step 3Add V-8 and bring back to boil then add the vegetables and barley and cook according to barley directions. Add pepper and then salt to taste.

Step 4Soup needs to rest at least an hour for a better flavor-Enjoy!
