stew beef or round steak-cut in very small cubes
olive oil
7 c
beef bullion cubes
1 large
onion- diced
1/2 c
chopped parsley
2 c
cabbage-cut in small pieces
1 can(s)
diced tomatoes
4 can(s)
mixed vegetables-drained
1 can(s)
12 oz. v-8 juice
1 can(s)
cut green beans
1 1/2 c
quick cook barley
fresh ground black pepper

How to Make Easy Beef Barley Soup


  • 1brown beef in oil,add water and bullion bring to a boil over high heat
  • 2add,onion,parsley and cabbage,and tomatoes cook until cabbage is crisp tender approx.15 to 20 min.
  • 3Add V-8 and bring back to boil then add the vegetables and barley and cook according to barley directions. Add pepper and then salt to taste.
  • 4Soup needs to rest at least an hour for a better flavor-Enjoy!
