Corned Beef and Cabbage Soup (low carb)
3celery ribs, diced
1cabbage head, small - finely shredded
2thick slices corned beef (from the deli), diced
32 ozbeef broth
·salt & pepper to taste
2 Tbspolive oil
How to Make Corned Beef and Cabbage Soup (low carb)
- Add olive olive to a soup pan or large dutch oven; heat on medium high.
- Add carrots, celery and onion and saute for 5-7 minutes.
- Add corned beef and shredded cabbage. Saute until cabbage starts to wilt.
- Add beef broth, bays leaves and salt & pepper. Simmer for an hour before serving.
