Had this for lunch this week at a local restaurant and decided to replicate it at home.

Ingredients
- 3 - carrots, diced
- 3 - celery ribs, diced
- 1 - onion, diced
- 1 - cabbage head, small - finely shredded
- 2 - thick slices corned beef (from the deli), diced
- 32 ounces beef broth
- 2 - bay leaves
- - salt & pepper to taste
- 2 tablespoons olive oil
How To Make corned beef and cabbage soup (low carb)

Step 1Add olive olive to a soup pan or large dutch oven; heat on medium high.

Step 2Add carrots, celery and onion and saute for 5-7 minutes.

Step 3Add corned beef and shredded cabbage. Saute until cabbage starts to wilt.

Step 4Add beef broth, bays leaves and salt & pepper. Simmer for an hour before serving.
