Ingredients

  • 1 pound beef stew meat (chuck roast), cut into 1/2-inch cubes
  • 1 tablespoon olive oil or butter
  • 1 medium onion, chopped
  • 4 ounces cremini or button mushrooms, sliced (about 1 1/2 cups)
  • 1 celery stalk, diced
  • 1 medium carrot, peeled and cut into 1/2-inch chunks or rounds
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1/2 cup water
  • 1/2 teaspoon dried thyme
  • 1 pinch ground sage (literally half of ⅛ tsp)
  • 1 1/2 teaspoons Worcestershire sauce
  • salt and pepper to taste
  • optional heartier add-ins: 1 medium potato (peeled and diced), or ¼ cup pearl barley or long grain rice – add in the last 35–40 minutes

  • Step 1
    Heat oil/butter in a medium pot.
  • Stew meat in process of being browned.
    Step 2
    Season the beef with salt and pepper and brown in one batch.
  • Step 3
    Remove and set aside.
  • Beef and vegetables ready to go into the pot.
    Step 4
    In the same pot, sauté onion, mushrooms, carrots, and celery until mushrooms give up their liquid and things start to brown, 6 – 8 minutes.

    Step 5
    Add garlic and saute for 30 – 60 seconds.
  • Step 6
    Sprinkle in the flour, stir making sure to coat the vegetables and cook 1 minute.
  • Step 7
    Gradually pour in broth and water, scraping up browned bits.
  • Step 8
    Return beef to pot.
  • Step 9
    Add thyme, sage, bay leaf, and Worcestershire sauce.

    Bring to a boil, reduce to low, cover, and simmer 1 1/2 – 2 hours until beef is very tender.
