Ingredients
- 1 pound beef stew meat (chuck roast), cut into 1/2-inch cubes
- 1 tablespoon olive oil or butter
- 1 medium onion, chopped
- 4 ounces cremini or button mushrooms, sliced (about 1 1/2 cups)
- 1 celery stalk, diced
- 1 medium carrot, peeled and cut into 1/2-inch chunks or rounds
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1/2 cup water
- 1/2 teaspoon dried thyme
- 1 pinch ground sage (literally half of ⅛ tsp)
- 1 1/2 teaspoons Worcestershire sauce
- salt and pepper to taste
- optional heartier add-ins: 1 medium potato (peeled and diced), or ¼ cup pearl barley or long grain rice – add in the last 35–40 minutes

Step 1Heat oil/butter in a medium pot.

Step 2Season the beef with salt and pepper and brown in one batch.

Step 3Remove and set aside.

Step 4In the same pot, sauté onion, mushrooms, carrots, and celery until mushrooms give up their liquid and things start to brown, 6 – 8 minutes.

Step 5Add garlic and saute for 30 – 60 seconds.

Step 6Sprinkle in the flour, stir making sure to coat the vegetables and cook 1 minute.

Step 7Gradually pour in broth and water, scraping up browned bits.

Step 8Return beef to pot.

Step 9Add thyme, sage, bay leaf, and Worcestershire sauce.

Step 10Bring to a boil, reduce to low, cover, and simmer 1 1/2 – 2 hours until beef is very tender.

Step 11If using potato/rice/barley, add in the last 35 – 40 minutes.

Step 12Remove bay leaf, taste, and adjust salt/pepper.

Step 13Serve hot. We like homemade bread and butter with it.
