Ingredients
- 1.5 pounds beef stew meat
- 1 chopped onion
- 1 minced garlic clove
- 4 carrots
- 3 celery ribs, diced
- 28 ounces tomatoes
- 3 cans beef consomme
- 2 cups water
- 1 bay leaf
- 1/4 cup parsley, fresh and chopped
- salt and pepper to taste
- 1 can tomato soup, optional
- croutons, Parmesan
How To Make classic beef and barley

Step 1Brown beef onion and garlic in dutch oven or heavy kettle until meat is no longer pink.

Step 2Add barley and remaining ingredients, except croutons.

Step 3Cover and cook simmering 1 1/2 to 2 hours.

Step 4Serve with garnish of toasted parmesan croutons and additional minced parsley.

Step 5Makes 6-8 servings.
