Just a warm soup for a cold fall day....I serve this Mexican Corn bread muffins.......ENJOY!

Ingredients

  • 1 1/2 cups ground sirloin
  • 1 large onion diced
  • 1 can 15 oz tomato sauce
  • 2 cans 10 oz enchilada sauce
  • 1 can chili beans
  • 1 can great northern beans
  • 1 can corn kernels, fresh or frozen
  • 1 can diced fire=roasted tomatoes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 cups shredded monterey jack cheese

How To Make cheesy enchilada soup

  • Step 1
    cook meat and onions over medium high heat and drain well...add everything except the cheese and simmer for about 1 hour...then add cheese until melted...Garnish with sour cream and cheese...add Jalpenoes if like!!!
