Ingredients

250 gbacon
-
50 mlolive oil
-
1 kgonions diced
-
3 clovegarlic minced

2 kgextra-lean ground beef
-
2-3chipotle pepper in adobo chopped
-
3 gdried whole marjoram
-
5 gdried whole rosemary
-
3 gdried whole thyme
-
2bay leaves dried
-
250 mlred wine, dry burgundy

1 lwhole tomatoes
-
4 lbeef broth
-
300 gchopped dill pickles
-
1 kgbaby spinach
-
·salt and pepper to taste
-
·worchestershire sauce to taste
-
12 slicehearty bread
-
·dijon mustard
-
500 ggrated sharp cheese mix (ues cheddar emmenthal, asiago, parmesan , romano or any mix you want.
How to Make Cheeseburger soup
- Saute Bacon onions and garlic in olive oil
- Add Ground beef and continue cooking until beef is fully cooked. Drain excess fat
- Add Chipotles, herbs, tomatoes, and liquids and simmer for 1 hour.
- Just before it is finished add chopped dill pickles and baby spinach. Salt, Pepper and Worchestershire sauce to taste.
- To serve, spread Dijon onto bread slice and float bread on soup. Top with cheese and grill under broiler until cheese is melted (Much like french onion soup)
