Was fooling around and thought "what would be in a cheeseburger soup, so I made one.

Ingredients For cheeseburger soup

  • 250 g
    bacon
  • 50 ml
    olive oil
  • 1 kg
    onions diced
  • 3 clove
    garlic minced
  • 2 kg
    extra-lean ground beef
  • 2-3
    chipotle pepper in adobo chopped
  • 3 g
    dried whole marjoram
  • 5 g
    dried whole rosemary
  • 3 g
    dried whole thyme
  • 2
    bay leaves dried
  • 250 ml
    red wine, dry burgundy
  • 1 l
    whole tomatoes
  • 4 l
    beef broth
  • 300 g
    chopped dill pickles
  • 1 kg
    baby spinach
  • salt and pepper to taste
  • worchestershire sauce to taste
  • 12 slice
    hearty bread
  • dijon mustard
  • 500 g
    grated sharp cheese mix (ues cheddar emmenthal, asiago, parmesan , romano or any mix you want.

How To Make cheeseburger soup

  • 1
    Saute Bacon onions and garlic in olive oil
  • 2
    Add Ground beef and continue cooking until beef is fully cooked. Drain excess fat
  • 3
    Add Chipotles, herbs, tomatoes, and liquids and simmer for 1 hour.

    Just before it is finished add chopped dill pickles and baby spinach. Salt, Pepper and Worchestershire sauce to taste.

    To serve, spread Dijon onto bread slice and float bread on soup. Top with cheese and grill under broiler until cheese is melted (Much like french onion soup)
