My mom used to make this with leftover steak or even left over cubed roast. Mmmm...

Ingredients

  • 2 pounds beef top round steak, boneless
  • 1 tablespoon oil
  • 1 medium onion, coarsly chopped
  • 1 tablespoon flour
  • 1 clove garlic, minced (or more) :o)
  • 2 large potatoes, chopped 1/2"-3/4"
  • 2 cans (lg cans) tomatoes
  • 2 cans whole green chilis chopped coarsly (or more)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin
  • 2 1/2 cups beef stock

How To Make caldillo

  • Step 1
    Cut meat into cubes ½”- ¾”. Brown well in the oil (medium high heat). Add flour, onion & garlic & continue browning about 10 min.
  • Step 2
    Add remaining ingredients ~ Simmer 2-4 hrs.
  • Step 3
    GREAT on a cold winter day! *You can cut up any steak for this – even leftover steak works well, you just don’t need to brown it, just begin where you add the flour, onion and garlic.
