cabbage soup

This is a recipe that was given to me by my Aunt Gloria. A good one for soup season!

Ingredients

  • 1 pound ground sirloin
  • 1 - medium onion, chopped
  • 1/2 - head cabbage, chopped
  • - handful of flat leaf parsely, chopped (optional)
  • 2 cans diced tomatoes
  • 1 can beef broth
  • 1 - 12 ounce can tomato juice
  • 1 can kidney beans
  • 1/2 clove garlic, chopped or you can use garlic powder
  • 1 tablespoon chili powder(you can adjust to your own taste)
  • - salt and pepper to taste if needed
  • - *note: if you want the soup less tomatoey, use 2 cans of beef broth and no tomato juice.

How To Make cabbage soup

  • Step 1
    Saute until onions are clear and meat is no longer pink.
  • Step 2
    Add all other ingredients, EXCEPT the beans to the pot and simmer until cabbage is tender. This usually takes about 1 hour.
  • Step 3
    Drain and rinse can of kidney beans and add to soup. Simmer for another 30 minutes.
