cabbage soup with beef & rice
This cabbage soup was inspired by the soup my mom made this time of year when she was on a diet. It never tasted low calorie, it's always a great comfort food. Easy enough to make for a weekday dinner. We serve with a good loaf of crusty bread (I know, it's not diet) and butter.

Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- salt & pepper to taste
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 small head green cabbage, chopped
- 3-4 medium carrots, sliced
- 4 cups beef broth, low sodium
- 3 - 8 oz cans tomato sauce
- 1/2 cup white rice
- 1 bay leaf
- 3 tablespoons brown sugar, light
- 2 tablespoons fresh parsley, chopped
How To Make cabbage soup with beef & rice

Step 1In a large soup pot, heat oil and add ground beef. Season with salt & pepper to taste; cook until brown.

Step 2Add diced onion and minced garlic and cook until tender.

Step 3Add cabbage, carrots, beef broth, tomato sauce, white rice, brown sugar, bay leaf and stir.

Step 4Simmer for about 25-30 minutes until rice is tender. Take out the bay leaf and add the chopped parsley.
