Ingredients

  • 5 - medium size beets
  • 2 - medium size cooking onions
  • 4 cups water
  • 8 cups clamato or tomato juice
  • 1 - juice of 1 lemon

How To Make beet soup

  • Step 1
    Wash beets and cut into tooth pick length and a little smaller than the size of french fries..dice onions.
  • Step 2
    Saute onions in 1 Tbsp oil in large pot cook til tender about 10 minutes add beets , water and clamato or tomato juice to pot simmer ubtil the beets are fork tender..add juice of 1 lemon,,I also add a 19 ounce can of red kidney beans..which have been rinsed..add salt and pepper to your taste...freezes well..serve with a dollop of sour cream on top ..
