Ingredients
- 1 pound beef stew meat, cut into bite size pieces
- 1 medium onion, chopped
- 1 pound mini red potatoes, depending on size cut in half or quartered
- 1 bag baby carrots
- 1 cup dried lentils, rinsed
- 3/4 cup pearl barley
- 8 cups beef broth, 64 ozs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon sweet paprika, not smoked
- 1 tablespoon sugar
- 1/2 teaspoon marjoram
- 2 cans stewed tomatoes, 14.5 ozs each
How To Make beef vegetable barley lentil soup

Step 1Put meat into a 5 qt. slow cooker. Layer with onions, potatoes, carrots, lentils, and barley.

Step 2Combine broth and seasonings, pour over vegetables. Cover and cook on low for 6 hours or until vegetables, barley and lentils are tender.

Step 3Add tomatoes and cook 2 hours longer.

Step 4Can use ground beef instead of stew meat, but brown beef with onion before putting in slow cooker.

Step 5You can add the tomatoes at the start, but use diced tomatoes instead of stewed.
