A flavorful beef stew, tex mex style. Cooked in the crock pot.

Ingredients

  • 3 pounds sirloin tips
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (10 1/2 oz) condensed beef broth, undiluted
  • 1 cup mild picante sauce or salsa
  • 1 can can whole corn
  • 1 medium onion, cut in quarters then sliced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 cup all purpose flour
  • 1/2 cup water
  • 1 medium green squash
  • 1 cup fresh kale, chopped

How To Make beef stew

  • Step 1
    Cook sirloin in large skillet, until no longer pink
  • Step 2
    Combine meat, tomatoes, beef broth, picante sauce or salsa, corn, onion, cumin and salt. To crock pot
  • Step 3
    Cook on low for 4-5 hours, or until meat is tender.
  • Step 4
    Stir together flour and water. Stir flour mixture into stew mixture and cook on HIGH setting 1 hour or until thickened.
