This is an easy and delicious soup to make instead of salad or on colder days. It makes up fast in the rice cooker or can be made in the crock pot and cooked for 4 hours

- 2 cans 12 oz each beef chunk
- 2 cans mixed vegetables, such as veg all's
- 1 can green beans
- 1 can petite diced tomatoes or whole tomatoes
- 32 ounces beef broth
- 2 tablespoons beef bouillon granules or 2 cubes bouillon cubes crushed
How To Make beef minestrone soup for the rice cooker

Step 1Add all the above to a rice cooker( mine is a 10 cup) and set to white rice. in the time it takes for the rice to be done the soup will be done. You can also add barley or rice or pasta to this for a heavier soup!

Step 2if you want this vegetarian omit the cans of beef cubes and change the bouillon to 32 oz of vegetable broth. Then add barley, rice or quinoa for a meal type soup!
