Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 bunch scallions chopped
- 2 teaspoons each garlic powder, dried basil, and paprika
- 1/2 teaspoon black pepper
- 1 teaspoon each thyme, oregano, and salt
- 1 cup marinara sauce
- 1/4 cup tomato paste
- 4 cups beef broth
- 2 cups cauliflower rice
- 1 tablespoon red wine vinegar
- 1 cup fresh spinach leaves
How To Make beef and cauliflower rice soup

Step 1Place the oil in a Dutch oven. Brown the meat with the green onions. Add the spices, marinara, and tomato paste.

Step 2Pour in the beef broth. Bring to a boil and add the cauliflower rice. Reduce to a simmer and cook 15 minutes. Add the red wine vinegar and spinach and cook 5 minutes.
