  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 bunch scallions chopped
  • 2 teaspoons each garlic powder, dried basil, and paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon each thyme, oregano, and salt
  • 1 cup marinara sauce
  • 1/4 cup tomato paste
  • 4 cups beef broth
  • 2 cups cauliflower rice
  • 1 tablespoon red wine vinegar
  • 1 cup fresh spinach leaves

How To Make beef and cauliflower rice soup

  • Step 1
    Place the oil in a Dutch oven. Brown the meat with the green onions. Add the spices, marinara, and tomato paste.
  • Step 2
    Pour in the beef broth. Bring to a boil and add the cauliflower rice. Reduce to a simmer and cook 15 minutes. Add the red wine vinegar and spinach and cook 5 minutes.
