Ingredients

  • 1 tablespoon cooking oil
  • 2 pounds beef short ribs
  • 2 - onions, coarsely chopped
  • 3 - carrots, sliced
  • 3 - celery stalks, sliced
  • 28 ounces canned tomatoes, undrained and chopped
  • 2 cups water
  • 4 - beef bouillon cubes
  • 1 cup medium barley

How To Make beef and barley soup

  • Step 1
    In a large dutch oven or kettle, heat oil over medium-high.
  • Step 2
    Add onions, carrots, celery, tomatoes, water and bouillon.
  • Step 3
    Bring to a boil.
  • Step 4
    Brown beef.
  • Step 5
    Cover and simmer for about 2 hours or until beef is tender.
  • Step 6
    Add more water if necessary.
  • Step 7
    Add barley.
  • Step 8
    Simmer another 50-60 minutes or until barley is done.
