  • 1 Tbsp
    cooking oil
  • 2 lb
    beef short ribs
  • 2
    onions, coarsely chopped
  • 3
    carrots, sliced
  • 3
    celery stalks, sliced
  • 28 oz
    canned tomatoes, undrained and chopped
  • 2 c
  • 4
    beef bouillon cubes
  • 1 c
    medium barley

How to Make Beef And Barley Soup


  1. In a large dutch oven or kettle, heat oil over medium-high.
  2. Add onions, carrots, celery, tomatoes, water and bouillon.
  3. Bring to a boil.
  4. Brown beef.
  5. Cover and simmer for about 2 hours or until beef is tender.
  6. Add more water if necessary.
  7. Add barley.
  8. Simmer another 50-60 minutes or until barley is done.
