Ingredients
- 1 tablespoon cooking oil
- 2 pounds beef short ribs
- 2 - onions, coarsely chopped
- 3 - carrots, sliced
- 3 - celery stalks, sliced
- 28 ounces canned tomatoes, undrained and chopped
- 2 cups water
- 4 - beef bouillon cubes
- 1 cup medium barley
How To Make beef and barley soup

Step 1In a large dutch oven or kettle, heat oil over medium-high.

Step 2Add onions, carrots, celery, tomatoes, water and bouillon.

Step 3Bring to a boil.

Step 4Brown beef.

Step 5Cover and simmer for about 2 hours or until beef is tender.

Step 6Add more water if necessary.

Step 7Add barley.

Step 8Simmer another 50-60 minutes or until barley is done.
