Ingredients

  • 1/2 lb
    ground beef
  • 3
    celery stalks, with the leaves
  • 2
    carrots
  • 1
    onion
  • 1 c
    barley, uncooked
  • 2 clove
    garlic
  • 2
    bay leaves
  • 1 tsp
    thyme, dried
  • 1/4 tsp
    pepper
  • 6 qt
    water
  • 2
    beef bouillon, cubes

How to Make Beef and Barley Soup-kl

Step-by-Step

  1. In a lg heavy stock pot cook the ground beef on medium heat. Remove 1/2 of the fat from the pan.
  2. Meanwhile chop veggies.
  3. Add veggies and spices cooking for 5 min. stirring often to keep from burning.
  4. Add the water and bouillon cubes. Bring to a boil on high heat. Reduce the heat to med-high and cook for 30 minutes.
  5. Add the barley and continue to cook uncovered for about an hour.
