Ingredients

  • 1/2 pound ground beef
  • 3 - celery stalks, with the leaves
  • 2 - carrots
  • 1 - onion
  • 1 cup barley, uncooked
  • 2 cloves garlic
  • 2 - bay leaves
  • 1 teaspoon thyme, dried
  • 1/4 teaspoon pepper
  • 6 quarts water
  • 2 - beef bouillon, cubes

How To Make beef and barley soup-kl

  • Step 1
    In a lg heavy stock pot cook the ground beef on medium heat. Remove 1/2 of the fat from the pan.
  • Step 2
    Meanwhile chop veggies.
  • Step 3
    Add veggies and spices cooking for 5 min. stirring often to keep from burning.
  • Step 4
    Add the water and bouillon cubes. Bring to a boil on high heat. Reduce the heat to med-high and cook for 30 minutes.
  • Step 5
    Add the barley and continue to cook uncovered for about an hour.
