Ingredients
- 1/2 pound ground beef
- 3 - celery stalks, with the leaves
- 2 - carrots
- 1 - onion
- 1 cup barley, uncooked
- 2 cloves garlic
- 2 - bay leaves
- 1 teaspoon thyme, dried
- 1/4 teaspoon pepper
- 6 quarts water
- 2 - beef bouillon, cubes

Step 1In a lg heavy stock pot cook the ground beef on medium heat. Remove 1/2 of the fat from the pan.

Step 2Meanwhile chop veggies.

Step 3Add veggies and spices cooking for 5 min. stirring often to keep from burning.

Step 4Add the water and bouillon cubes. Bring to a boil on high heat. Reduce the heat to med-high and cook for 30 minutes.

Step 5Add the barley and continue to cook uncovered for about an hour.
