asian pork & noodles in a kicking sauce

I played around with this dish, using several types of protein. My first thought was to use bite-size chunks of pork, chicken, or beef, but finally settled on using ground pork. Cooking the pork was the next step, and I decided to poach the ground pork in pepper-laced water… The sauce then pulls it all together. So yummy. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1/2 pound ground pork
  • 1 tablespoon ground white pepper
  • 1/2 teaspoon cayenne pepper
  • THE SAUCE
  • 2 tablespoons grapeseed oil
  • 2 cloves garlic, minced
  • 4 medium green onions, chopped. just the white parts
  • 1 tablespoon ginger, minced
  • 1/3 cup tamari sauce
  • 3/4 cup chicken stock, not broth
  • 1/3 cup coconut sugar
  • 2 teaspoons chili garlic sauce, or to taste
  • 1 tablespoon arrowroot powder
  • 1/2 cup filtered water
  • 1 package ramen noodles
  • - toasted peanuts, for garnish

How To Make asian pork & noodles in a kicking sauce

    PREP/PREPARE
  • Step 2
    Gather your ingredients.
  • Step 3
    In a saucepan, add the white pepper, and cayenne to a quart of water.
  • Step 4
    Bring to the boil, add the ground pork, and allow to simmer for 5 to 7 minutes.
  • Step 5
    Chef’s Note: As the pork is cooking, break it apart with a wooden spoon.
  • Step 6
    Drain the pork and reserve.

    THE SAUCE
  • Step 8
    Heat the oil in a saucepan over medium heat.
  • Step 9
    When the oil begins to shimmer, add the garlic, ginger, and green onions, and then stir for about 20 seconds.

    Chef’s Note: Do not allow the garlic to burn.
  • Step 11
    Add the tamari sauce, chicken stock, coconut sugar, and the garlic chili sauce.
  • Step 12
    Allow the sauce to simmer, until it begins to thicken, about 2 to 3 minutes.
  • Step 13
    Whisk the water and arrowroot powder together.
  • Step 14
    Add to the sauce, and continue to simmer for about 5 minutes.
  • Step 15
    Add the ground pork, stir to incorporate, and then set the burner to low until the noodles are ready.

    Chef’s Note: Prepare the ramen noodles according to package directions. Or, you could have this over rice, or traditional pasta noodles.

  • Step 18
    Divide the ramen noodles between two bowls, then add the pork and sauce to the top, and finally garnish with some toasted peanuts. Enjoy.
