yield 6 serving(s)

Ingredients

  • 1 pound ground beef
  • 1 medium onion
  • 3 large green peppers
  • 2 cloves garlic
  • 1 can diced tomatoes (14.5 oz)
  • 1 can tomato sauce (8 oz)
  • 1 can petite diced tomatoes with green chilies (14.5 oz)
  • 4 cups beef broth
  • 1 cup white rice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 teaspoons granulated sugar

How To Make aldi stuffed pepper soup

  • Step 1
Brown the meat: In a large soup pot or Dutch oven, cook ground beef and onion over medium heat until beef is no longer pink. Drain excess grease if needed.
  • Step 2
Add peppers and garlic: Stir in chopped green peppers and garlic. Cook 4–5 minutes until peppers start to soften.
  • Step 3
Build the broth: Add diced tomatoes, tomato sauce, broth, Italian seasoning, salt, pepper, and paprika. Stir well and bring to a boil.
  • Step 4
Cook rice: Stir in rice. Reduce heat to low, cover, and simmer for about 25–30 minutes, or until rice is tender. Stir occasionally to prevent sticking. *(If you want rice firmer, cook it separately and stir it in at the end so it doesn’t over-soften.)
  • Step 5
Taste and adjust: Add a pinch of sugar if it tastes too acidic. Adjust seasonings to taste.
  • Step 6
Serve: Ladle into bowls and top with shredded cheese if desired.
