- 1 pound ground beef
- 1 medium onion
- 3 large green peppers
- 2 cloves garlic
- 1 can diced tomatoes (14.5 oz)
- 1 can tomato sauce (8 oz)
- 1 can petite diced tomatoes with green chilies (14.5 oz)
- 4 cups beef broth
- 1 cup white rice
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 teaspoons granulated sugar

Step 1Brown the meat: In a large soup pot or Dutch oven, cook ground beef and onion over medium heat until beef is no longer pink. Drain excess grease if needed.

Step 2Add peppers and garlic: Stir in chopped green peppers and garlic. Cook 4–5 minutes until peppers start to soften.

Step 3Build the broth: Add diced tomatoes, tomato sauce, broth, Italian seasoning, salt, pepper, and paprika. Stir well and bring to a boil.

Step 4Cook rice: Stir in rice. Reduce heat to low, cover, and simmer for about 25–30 minutes, or until rice is tender. Stir occasionally to prevent sticking. *(If you want rice firmer, cook it separately and stir it in at the end so it doesn’t over-soften.)

Step 5Taste and adjust: Add a pinch of sugar if it tastes too acidic. Adjust seasonings to taste.
