- 2 tablespoons olive oil
- 3 - 12oz cans white chicken meat
- 2 - 4oz cans chopped green chiles
- 2 - 15.5oz cans great northern beans (drained)
- 2 - 11oz cans white corn (undrained)
- 2 cups chicken broth
- 1/2 cup chopped onion
- 2 teaspoons ground cumin
- 2 teaspoons garlic powder (optional)
- 1 teaspoon ground oregano leaves
- 1 teaspoon ground cilantro leaves
- 1/2 teaspoon ground red pepper
- 2 cups shredded monterey jack and colby cheese

Step 1Sauté onion in oil over medium-high heat for 2-3 minutes.

Step 2Stir in broth, green chiles, and all spices. Simmer 30 minutes.
