Recipe can easily be doubled by simply doubling all ingredients. Finely chopped celery, carrots, parsley, or other varieties of beans can be used in recipe, if desired. Can also serve with sour cream, tortilla chips, or cornbread.

Ingredients

  • 2 tablespoons olive oil
  • 3 - 12oz cans white chicken meat
  • 2 - 4oz cans chopped green chiles
  • 2 - 15.5oz cans great northern beans (drained)
  • 2 - 11oz cans white corn (undrained)
  • 2 cups chicken broth
  • 1/2 cup chopped onion
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder (optional)
  • 1 teaspoon ground oregano leaves
  • 1 teaspoon ground cilantro leaves
  • 1/2 teaspoon ground red pepper
  • 2 cups shredded monterey jack and colby cheese

How To Make white chicken corn chili

  • Step 1
    Sauté onion in oil over medium-high heat for 2-3 minutes.
  • Step 2
    Stir in broth, green chiles, and all spices. Simmer 30 minutes.
  • Step 3
    Stir in chicken, beans, and corn. Simmer an additional 20-30 minutes.
  • Step 4
    Garnish with Monterey Jack and Colby cheese.
