white bean spinach soup

This soup is so good with a nice crusty bread. I have shared it with many friends and they all love it.

Ingredients

  • 1 medium chopped onion
  • 2 large links itialian sausage ( casings removed)
  • 1 medium chopped celery
  • 1 clove minced garlic
  • 2 cans cannellini beans. do not drain
  • 2 cups chicken broth
  • - pinch of salt, thyme and pepper
  • 10 ounces fresh spinach leaves
  • 1 cup ditalini (small tube pasta.
  • - grated parmesan cheese

How To Make white bean spinach soup

  • Step 1
    Saute the onion, sausage and celery inoil until tender; add minced garlic and saute for 3o seconds more. Add the beans, broth and spices. Simmer for 15 minutes. Stir in spinach and cooked pasta and cook just until the spinach is wilted about 1 minute. Top with fresh grated parmasan cheese and serve with crusty bread. Delicious!!!
