Just your basic white bean soup that is warm, filling and comforting. Delicious served with corn bread, garlic bread or even just oyster or saltine crackers !

Ingredients For white bean soup for two

  • 3 slice
    smoked bacon
  • 1/4 c
    chopped onions
  • 1/4 c
    chopped celery
  • 1/8 c
    chopped carrot
  • 1/4 tsp
    ea of italian seasoning, black pepper and minced garlic - more to taste
  • 2 Tbsp
    flour
  • 1 can
    15 oz size white cannellini or great northern beans - rinsed and drained
  • 2 c
    chicken or vegetable broth
  • snipped chives for garnish

How To Make white bean soup for two

    Drain the beans and rinse. Take about 1/3 of the beans and place into a bowl and smash them. To the smashed beans, add about 3-4 Tbsp chicken broth and stir. Once mixed set aside.

    Chop the bacon into small pieces then place into a 2 qt saucepan. Cook over medium-high heat, stirring occasionally, until browned and crisp. Remove the bacon and place onto a paper towel lined plate to drain. Do not discard the bacon drippings.

    Add the chopped onions, celery and carrots to the drippings and cook, stirring occasionally for 3 minutes or until slightly tender. NOTE: If there is not enough fat in the pan add up to 1 Tbsp oil or BaconUp. Stir in the seasonings and garlic and cook for 1 minute more.

    Sprinkle the flour into the mixture and cook for 2-3 minutes. Add the drained beans and the broth then bring to a boil over medium-high heat. Stir in the mashed bean mixture, then reduce the heat to low and simmer, stirring occasionally for 15 minutes. Serve hot garnished with the cooked bacon and some snipped chives.
