tuscan white bean and sausage soup
This was fantastic. We maed it with meatless sausage for a client, but you can rest assured we will be making this one for us with real sausage!

Ingredients
- 1 pound sausage
- 1 large carrot diced
- 1 package spinach fresh
- 1 medium zucchini sliced
- 1 medium onion diced
- 2 cloves garlic minced
- 6 cups stock
- 1 can pasta sauce
- 1 cup cooked pasta
- 2 cans white beans
- 1 teaspoon olive oil
- 1 cup red wine
How To Make tuscan white bean and sausage soup

Step 1Put a small sauce pan on to boil water for the pasta. Add 2/3 cup to the boiling water. When it is done, drain and set aside.

Step 2Remove the sausage from the casings. Cut each sausage into one-inch pieces.

Step 3Heat a large soup pot over medium heat for one minute, add the sausage and brown. Remove and set aside. Saute the carrots in 1 tablespoon olive oil until soft, add the onions and garlic, cook two minutes, add the zuchinni, cook 1 minute more

Step 4Let soup simmer on low for 10 minutes. Add the pasta, the canned pasta sauce, the wine and the whole bag of washed spinach. Simmer for 5 minutes.
