Ingredients
- 2 tablespoons butter
- 3 small to med onions, diced
- 2 carrots, peeled and sliced
- 2 3/4 quarts water
- 3 pounds dried yellow split peas
- 1/2 pound salt pork or 1 smoked ham hock
- 2-3 bay leaves
- 1 teaspoon dried savoury
- salt and pepper to taste

Step 1Soak peas overnight and drain.

Step 2Put all ingredients into the pot. Bring to a boil for 2 minutes. Remove from heat and let stand 1 hour or more until peas are tender.

Step 3Add salt and pepper. Reheat before serving. Usually tastes better second time around.
