Ingredients

  • 2 tablespoons butter
  • 3 small to med onions, diced
  • 2 carrots, peeled and sliced
  • 2 3/4 quarts water
  • 3 pounds dried yellow split peas
  • 1/2 pound salt pork or 1 smoked ham hock
  • 2-3 bay leaves
  • 1 teaspoon dried savoury
  • salt and pepper to taste

How To Make traditional french-canadian split pea soup

  • Step 1
    Soak peas overnight and drain.
  • Step 2
    Put all ingredients into the pot. Bring to a boil for 2 minutes. Remove from heat and let stand 1 hour or more until peas are tender.
  • Step 3
    Add salt and pepper. Reheat before serving. Usually tastes better second time around.
