tamale soup
I started out wanting to use up some chicken stock, saw the black beans, and went from there. We love enchiladas and tamales and we really enjoy soup for dinner, so I figured the flavors were all there, why wouldn't it be delicious? It was. Got my fussy husband's seal of approval, and, believe me, that's something.

Ingredients
- 2 cans black beans, drained
- 2 cups chicken stock
- 1 can yellow hominy, undrained
- 1 can 15 ounce size, crushed tomatoes
- 1 can 10 ounce size green chile enchilada sauce
How To Make tamale soup

Step 1Combine all ingredients and bring them up to a simmer over medium heat.

Step 2Simmer for 15 - 20 minutes on low heat, covered, stirring occasionally.

Step 3Grate some sharp cheddar cheese and place it in a bowl for use at the table.
