I started out wanting to use up some chicken stock, saw the black beans, and went from there. We love enchiladas and tamales and we really enjoy soup for dinner, so I figured the flavors were all there, why wouldn't it be delicious? It was. Got my fussy husband's seal of approval, and, believe me, that's something.

Ingredients For tamale soup

2 canblack beans, drained

2 cchicken stock

1 canyellow hominy, undrained

1 can15 ounce size, crushed tomatoes

1 can10 ounce size green chile enchilada sauce
How To Make tamale soup

1Combine all ingredients and bring them up to a simmer over medium heat.

2Simmer for 15 - 20 minutes on low heat, covered, stirring occasionally.

3Grate some sharp cheddar cheese and place it in a bowl for use at the table.
