I find this to be a crowd pleaser. Over the holidays we have an open house and I make soup. I usually make 2 if not 3 different ones. But taco soup is always on the menu. You can substitute chicken in place of the hamburger.

Ingredients

  • 1 pound lean hamburger
  • 1 small onion chopped
  • 2 cans 12 oz pinto beans undrained
  • 1 can 12 oz red kidney beans undrained
  • 1 can 12 oz chili beans undrained
  • 1 can 12 oz corn undrained
  • 1 can 12 oz beef broth
  • 1 can 12 oz diced mexican tomatoes undrained
  • 1 package taco seasoning
  • 1 can 8 oz sliced black olives
  • 2 cups grated cheddar or white mexican cheese
  • 1 cup sour cream, lite
  • 1 - bag corn chips

How To Make taco soup

  • Step 1
    In a stock pot brown your hamburger and drain. I believe is washing as few dishes as possible. That's why I brown my hamburger in the stock pot and not a skillet! =)
  • Step 2
    Once you have your drained hamburger back in the stock pot add your diced onion and saute just a little bit to get the onion cooked. Then add your beef broth and taco seasoning.
  • Step 3
    Mix all remaining ingredients in (except cheese, sour cream & chips) and simmer for the afternoon or cook on medium for 1 hour.
  • Step 4
    The smell will bring them in the kitchen. To serve dish up your piping hot soup and top with grated cheese and a dollup of sour cream with chips on the side!
