I threw this recipe together with what I had in my pantry and was a way to use up some leftover turkey from Thanksgiving. So tasty and ready in minutes.

Ingredients

  • 1 - 7 oz
    salsa verde
  • 1 - 4 oz
    can, green chiles
  • 1 - 15 oz
    can, drained cannellini beans or more if you like
  • 3 c
    cooked chopped, turkey - or chicken could be used
  • 1 tsp
    cumin
  • 3 c
    chicken broth
  • serve with
    green onion, sour cream if desired

How to Make ~ Southwestern Leftover Turkey Soup ~ So Easy

Step-by-Step

  1. In a medium saucepan or dutch oven, over medium heat - add the salsa and green chiles. Cook and stir for a couple minutes.
  2. Add the broth, turkey, cumin, beans, stir and bring to a boil. Reduce heat and simmer for 15 minutes.
  3. Serve with sour cream, green onions and tortilla chips if desired.

    Wonderful flavor!
