So simple, yet so yummy. Great served w/ a loaf of italian bread!

  • 2 tsp
    minced garlic
  • 1 Tbsp
    olive oil
  • 2
    leeks, sliced
  • 2
    14 oz cans chicken broth
  • 2 c
  • 1
    15 oz can navy beans, drained
  • 1 tsp
    dried thyme
  • 4 oz
    linguini, broken into small pieces.
  • 1 lb
    medium shrimp, peeled, deveined
  • 4
    plum tomatoes, chopped
  • 1 c
    fresh baby spinach leaves.

How to Make Seafood minestrone


  1. In 4-quart dutch oven, cook garlic in oil for 15 seconds, or until fragrant. Add leeks, cook until tender.
  2. Add broth, water, beans and thyme. bring to a boil. Add linguni and simmer, uncovered for about 10 mins.
  3. Stir in shrimp. Simmer until shrimp is pink. Place soup into bowl and add tomatoes and spinach. Stir.
