Ingredients

  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 2 - leeks, sliced
  • 2 - 14 oz cans chicken broth
  • 2 cups water
  • 1 - 15 oz can navy beans, drained
  • 1 teaspoon dried thyme
  • 4 ounces linguini, broken into small pieces.
  • 1 pound medium shrimp, peeled, deveined
  • 4 - plum tomatoes, chopped
  • 1 cup fresh baby spinach leaves.

How To Make seafood minestrone

  • Step 1
    In 4-quart dutch oven, cook garlic in oil for 15 seconds, or until fragrant. Add leeks, cook until tender.
  • Step 2
    Add broth, water, beans and thyme. bring to a boil. Add linguni and simmer, uncovered for about 10 mins.
  • Step 3
    Stir in shrimp. Simmer until shrimp is pink. Place soup into bowl and add tomatoes and spinach. Stir.
