Ingredients
- 2 teaspoons minced garlic
- 1 tablespoon olive oil
- 2 - leeks, sliced
- 2 - 14 oz cans chicken broth
- 2 cups water
- 1 - 15 oz can navy beans, drained
- 1 teaspoon dried thyme
- 4 ounces linguini, broken into small pieces.
- 1 pound medium shrimp, peeled, deveined
- 4 - plum tomatoes, chopped
- 1 cup fresh baby spinach leaves.
How To Make seafood minestrone

Step 1In 4-quart dutch oven, cook garlic in oil for 15 seconds, or until fragrant. Add leeks, cook until tender.

Step 2Add broth, water, beans and thyme. bring to a boil. Add linguni and simmer, uncovered for about 10 mins.

Step 3Stir in shrimp. Simmer until shrimp is pink. Place soup into bowl and add tomatoes and spinach. Stir.
