Sausage Bean Soup

1 lbpkg. Kielbasa sausage
1 mediumonion, chopped
15 ozcan Italian stewed tomatoes
15 ozcan Cajun or Mexican stewed tomatoes
·Basil, oregano, garlic salt and bay leaves, to taste
15 ozcan kidney beans
15 ozcan whole kernel corn
·Shredded Parmesan cheese, if desired
How to Make Sausage Bean Soup
- Cut Kielbasa into thin slices.
- In soup pan or dutch oven, saute sausage and onions; add tomatoes, with juices, and seasonings. Simmer approximately 20 minutes.
- Just before serving, add beans and corn, with juices. Heat through.
- Sprinkle with Parmesan cheese, if desired and crusty French bread.
