Ingredients

  • 1 tablespoon oil
  • 2 medium onions, finely chopped
  • 1/2 pound red lentils
  • 6 cups beef stock
  • 1 teaspoon paprika
  • 1 - bay leaf
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon mint, dried
  • 1 teaspoon parsley, dried flakes

How To Make red lentil soup

  • Step 1
    In a large soup pot, saute oil and onions.
  • Step 2
    When onions are soft, add lentils; stir several minutes.
  • Step 3
    Add remaining ingredients; bring to a boil.
  • Step 4
    Simmer until lentils are very soft, about 35 minutes; soup may be pureed.
