Ingredients
- 1 tablespoon oil
- 2 medium onions, finely chopped
- 1/2 pound red lentils
- 6 cups beef stock
- 1 teaspoon paprika
- 1 - bay leaf
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon mint, dried
- 1 teaspoon parsley, dried flakes
How To Make red lentil soup

Step 1In a large soup pot, saute oil and onions.

Step 2When onions are soft, add lentils; stir several minutes.

Step 3Add remaining ingredients; bring to a boil.

Step 4Simmer until lentils are very soft, about 35 minutes; soup may be pureed.
