    onions, finely chopped
  • 1/2 lb
    red lentils
  • 6 c
    beef stock
  • 1 tsp
  • 1
    bay leaf
  • 1/2 tsp
  • 1/8 tsp
  • 1 tsp
    mint, dried
  • 1 tsp
    parsley, dried flakes

How to Make Red Lentil Soup


  1. In a large soup pot, saute oil and onions.
  2. When onions are soft, add lentils; stir several minutes.
  3. Add remaining ingredients; bring to a boil.
  4. Simmer until lentils are very soft, about 35 minutes; soup may be pureed.
