This is made with red lentils but the lentils turn yellowish when cooked. This is good with some lemon juice drizzled into each bowlful.

Ingredients

  • 2 c
    red lentils
  • 9 c
    water
  • 1 Tbsp
    beef boullion powder or enough boullion cubes for 3 cups broth
  • 1/4 c
    raw rice
  • 1
    onion choppped or 1 tbsp dry minced
  • 1 Tbsp
    flour
  • 1/4 c
    olive oil
  • 1 1/2 tsp
    cumin
  • ·
    salt & pepper to taste
  • ·
    1 lemon quartered or sliced

How to Make 'Red' Lentil Soup

Step-by-Step

  1. Rinse lentils and rice until water runs clear.
  2. Place lentils, rice, & onions in large pot with water & boullion.
  3. Simmer, covered for about 40 minutes, until lentils & rice are both tender.
  4. Combine the oil, flour & cumin.
  5. Add 1/2 cup soup to oil mixture. Combine well & add to pot.
  6. Stir it up and add salt & pepper to taste.
  7. Serve this in bowls with lemon wedges and crackers if you would like.
