'red' lentil soup
This is made with red lentils but the lentils turn yellowish when cooked. This is good with some lemon juice drizzled into each bowlful.

Ingredients
- 2 cups red lentils
- 9 cups water
- 1 tablespoon beef boullion powder or enough boullion cubes for 3 cups broth
- 1/4 cup raw rice
- 1 - onion choppped or 1 tbsp dry minced
- 1 tablespoon flour
- 1/4 cup olive oil
- 1 1/2 teaspoons cumin
- - salt & pepper to taste
- - 1 lemon quartered or sliced
How To Make 'red' lentil soup

Step 1Rinse lentils and rice until water runs clear.

Step 2Place lentils, rice, & onions in large pot with water & boullion.

Step 3Simmer, covered for about 40 minutes, until lentils & rice are both tender.

Step 4Combine the oil, flour & cumin.

Step 5Add 1/2 cup soup to oil mixture. Combine well & add to pot.

Step 6Stir it up and add salt & pepper to taste.

Step 7Serve this in bowls with lemon wedges and crackers if you would like.
