old world black bean soup
This is the way my dad use to make ham and bean soup. It has a great smoky taste from the ham hock and salt pork.

Ingredients
- 1/4 cup oil
- 1/2 pound salt pork diced
- 2 large onions
- 6 cloves garlic minced
- 1 large smoked meaty ham hock
- 12 cups chicken stock
- 1 teaspoon cayenne pepper
- 2 tablespoons ground cumin
- 1 cup molasses
- 4 - 15 oz cans black beans drained and rinsed
- 1/4 cup wine vinegar
How To Make old world black bean soup

Step 1Place oil in bottom of large pot. Saute the salt pork, onions and garlic until pork is crispy. Add the ham hock and chicken stock. Stir in the cumin and cayenne pepper.

Step 2Bring to a boil and reduce to a simmer and simmer 1 1/2 hours. Remove the ham hock and let it cool a bit. Add the black beans, molasses and vinegar to the pot.

Step 3Continue to simmer another 1/2 hour cutting the meat off the ham hock and adding it back to the pot.
