Ingredients

  • 1/2 lb
    bacon, chopped
  • 1 lb
    smoked sausage, sliced thin & cut in half
  • 1 large
    onion, chopped
  • 1 large
    bell pepper, chopped
  • 3 c
    water
  • 3 can(s)
    16-oz. each butter beans, drain and rinse
  • 1 can(s)
    15-oz. diced tomatoes with juice
  • 1 can(s)
    12-oz. tomato paste
  • 1 pkg
    16-oz. okra, frozen sliced
  • ·
    salt and pepper to taste

How to Make Okra and Butter Bean Stew

Step-by-Step

  1. In large pan, over medium heat cook bacon and sausage until bacon is crisp. Remove meat from pan and drain on paper towels. Discard all but 2 tablespoons of the drippings. Cook onion and green pepper in drippings until tender. Add water, beans, tomatoes, tomato paste, salt and pepper. Bring to a boil, reduce heat and simmer uncovered 10 minutes. Add meat and cook 10 minutes longer. Add okra; cover and cook 10 minutes longer or until okra is tender.
  2. Serve with white rice or corn bread.
