Ingredients
- 1 pound dried split peas
- 3 cups cold water
- 2 pounds smoke ham shank or bones
- 3 quarts boiling water
- 1 - onion, chopped
- 1 - celery stalk, chopped
- 1 teaspoon salt
- 2 - carrots, minced
How To Make my canadian pea soup

Step 1Wash and sort peas; soak in cold water overnight.

Step 2Drain and place in a large pot; add water, ham bone, onion, celery, carrots and salt.

Step 3Bring to a boil; reduce heat and simmer until peas are very tender, about 2 hours, adding more water if needed.

Step 4Remove ham; chop and return to soup.

Step 5Season to taste with salt and pepper.
