mmmmm good- bean and ham soup

I made this recipe up, myself. It's a favorite in our family, especially on a cold winter night.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 1 can green chile's
  • 1 large hunt's petite diced tomato's
  • 1 large large box beef broth
  • 4 cans bush's great northern beans (they are white beans)
  • 2 - ham steaks cut into cube size bites. (you can use pre-cubed packaged thick ham but they tend to be chewy) cut ham into bite size cubes.
  • 1 teaspoon pepper, garlic powder, dried parsley flakes

How To Make mmmmm good- bean and ham soup

  • Step 1
    In a large DEEP fry pan or pot, heat Olive Oil. Add diced onion and allow to cook until translucent. Add green chile's, diced tomato's, and cubed ham. Stir well.. Cooking on a simmer temp.
  • Step 2
    Once heated well, add the Northern Beans and beef broth along with the spices. Stir until well blended and allow to come to a soft boil.
  • Step 3
    Cook at a soft boil on the stove for 3 to 5 min. and then cut the heat down to a very very low bubble for about 20 min. Add more broth when needed or allow this to be a bit thicker by not adding more broth. This soup is great with a salad and hot rolls. Enjoy!
