mandy's ultimate vegan bean & barley soup

Just a recipe I came up with one cold snowy day. I'm a no fuss gal i threw it all in pretty much in same time except the sundried tomatos I added toward the end they give it a nice tangy flavor..

Ingredients

  • 1 can very large can cannellini drained and washed (aprox 1 lb)
  • 1 can black beans, canned drained
  • 1 can pinto beans drained
  • 2 cans tomato paste
  • 3 - med-lrg tomatoes cut up
  • 1 cup sundried tomatoes
  • 1 - large onion chopped
  • 4 - stalks celery chopped
  • 3 cups barley soaked and drained
  • - mixed spices i used: garlic powder, montreal chicken seasoning, cumin, lil pakrika, sea salt, green land spices tikka mild, and green land spices shishe kebab mixed spices--add what you like for flavor

How To Make mandy's ultimate vegan bean & barley soup

  • Step 1
    over med high heat :this is so easy, add to a large pot the cooked beans that are washed off, vegetsble bullion ( or what flavor you like ) add chopped onion, celery, and spices.
  • Step 2
    while its heating up add the barley thats been soaking in hot water, drain it first.
  • Step 3
    and remaining ingredients, once its boiling turn to low let simmer 45 min or so and your done!
