Lentil Soup

I have always loved lentil soup but I've had a difficult time finding a good recipe. I think this one is a crowd pleaser.

2 Tbsp
olive oil
1 c
finely chopped onion
1/2 c
finely chopped carrot
1/2 c
finely chopped celery
1 c
diced potato
2 tsp
2-1/4 c
lentils (or 1 pound)
2 qt
chicken or vegetable broth
1/2 tsp
ground coriander
1/2 tsp
ground cumin


1Place olive oil in a large 6 Qt dutch oven and place over medium heat. Once oil is hot add the onion, carrot, celery, potato and salt; until onions are translucent, approx. 6 to 7 minutes
2Add lentils, broth, coriander & cumin and stir to combine. Increase the heat to high and bring to a boil.
3Reduce the heat to low, cover and cook at a low simmer until the lentils are tender; approx 35 to 40.
