I have always loved lentil soup but I've had a difficult time finding a good recipe. I think this one is a crowd pleaser.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 1/2 cup finely chopped celery
  • 1 cup diced potato
  • 2 teaspoons salt
  • 2-1/4 cup lentils (or 1 pound)
  • 2 quarts chicken or vegetable broth
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin

How To Make lentil soup

  • Step 1
    Place olive oil in a large 6 Qt dutch oven and place over medium heat. Once oil is hot add the onion, carrot, celery, potato and salt; until onions are translucent, approx. 6 to 7 minutes
  • Step 2
    Add lentils, broth, coriander & cumin and stir to combine. Increase the heat to high and bring to a boil.
  • Step 3
    Reduce the heat to low, cover and cook at a low simmer until the lentils are tender; approx 35 to 40.
